With two Michelin stars in his career, at Tradición, the chef celebrates his roots and pays tribute to the cuisine of memory: the one that is born from the product, from slow cooking and from emotion.
This restaurant was born from the chef’s vital need to reconnect with the essential, to reclaim Spanish cuisine as a living, diverse and flavorful legacy. Spanish cuisine as a living, plural and tasty legacy. At Tradición, the product is the protagonist, technique is the ally and emotion is the guiding thread.
Every detail—from the selection of raw materials to the presentation—reflects a commitment to authenticity. The restaurant is a meeting place, where gastronomy becomes a common language and each meal a celebration of identity.
Tradición is located on the top floor of the impressive venue located at 24 Calle Velázquez, in Madrid’s most exclusive neighborhood and was designed by interior designer Alejandra Pombo.
The space features four distinct lounges, two private rooms and a classic cocktail bar, designed to accompany you during the midday, afternoon and evening.
A warm and ever-changing atmosphere that evolves with the light.
